HEALTHY ROASTED CAULIFLOWER SNACK

This week I shared one of my favorite healthy snacks on Insta-stories and immediately had so many requests to share the recipe. I love making this bite-sized Cauliflower dish that helps curb hunger and keeps me full in between meals. Za’atar is a middle eastern seasoning that can be used well on both vegetarian and meat flavored items. We love adding it to homemade hummus, grilled chicken, and even pita bread. ROASTED CAULIFLOWER WITH LEMON & ZA’ATAR

Ingredients
  1. 1 head of Cauliflower
  2. 1 large lemon
  3. 3 tablespoons of Za'atar seasoning
  4. Extra virgin olive oil
  5. chopped parsley (optional garnish)
  6. Salt & pepper to taste
Instructions
  1. Preheat oven to 350ºF
  2. Cut the head of the cauliflower into small bit size pieces. Spread them out on a non-stick roasting baking tray pan. Drizzle the cauliflower with the olive oil, sprinkle with za'atar seasoning & a dash of salt and pepper. Toss with your hands, spread in an even layer, cover tightly with foil and bake in the oven for 15 minutes until slightly crunchy. Remove from oven and coat with a squeeze of lemon. Garnish with parsley.
